Hello PK community! Today we are celebrating a wonderful long-term supporter of the ProjectKindness cause who went out of her way to bake and sell some goodies with her son, then donated profits to PK. We’re also going to be sharing a few tips for how you can get involved with ProjectKindness and help us raise funds…by having fun baking for a cause!

Baking For A Cause – Donor Story

Our story begins with a wonderful lady who has been donating to ProjectKindness for a while now. She was struggling to keep busy during Sydney lockdowns and decided to use her time to put towards helping her community.

She and her son spent quality time together baking delicious puddings and selling them to her work friends and colleagues. All up they managed to make just over $900 to donate to ProjectKindness

We were absolutely amazed and humbled by the time and effort she and her son had put towards changing the lives of the people we support. A $900 donation goes such a long way to feeding people, clothing people and helping in other ways.

How Can I Help?

If you find yourself with a little spare time during lockdown (or outside of lockdown) we’d love for you to get involved in fundraising for ProjectKindness! Whether you decide to do a COVID safe bake sale between family and friends, sell off some belongings (garage sale style) or have a birthday fundraiser where people can donate as a gift…it’s entirely up to you πŸ™‚

Easy Cupcake Recipe

If you’re stuck for ideas of what to bake and sell to fundraise, here’s a quick and easy cupcake recipe from taste.com.au that can easily be modified to incorporate other flavours and additions (like choc chips or fruits)!

Ingredients

  • 150g butter, softened
  • 150g caster sugar
  • 175g self-raising flour
  • 3 eggs, lightly beaten
  • 1 tsp vanilla extract

Method

  • Step 1: Preheat oven to 180C. Line a 12-hole muffin pan with 12 cupcake papers.
  • Step 2: Beat butter and sugar with an electric mixer for 2 minutes or until light and creamy. Then add eggs and vanilla. Combine. Mix in flour. Divide mixture evenly into prepared pan.
  • Step 3: Bake in the oven for 18-20 minutes or until firm to touch. Allow to cool for a few minutes and transfer to a wire rack. Allow to cool completely before icing with your choice of frosting. Enjoy!
